Luke and Kelly Rozema Finchem, the team behind Dutch Girl Brewery, are in the final stages of opening a full-scale microbrewing operation in Spring Lake.
While the name is inspired by Kelly Rozema Finchem’s heritage and longtime love of craft beer, husband Luke Finchem’s own background which includes both formal culinary school training and 20+ years homebrewing experience will also play a significant role in the operations. Spring Lake has already gained recognition in the Midwest for the hard cider of Vander Mill, as well as an already established brewpub Old Boys, and Dutch Girl plans to take it’s philosophy of “Craft Not Corporate” and take craft brewing to a new level including canning and distribution of their beer.

Dutch Girl Brewery has enlisted the help of Jim Riemenschneider of JRA Food Service Consultants for design of the brewery, whose previous projects have included work with Brewery Vivant, Harmony Brewing, and New Holland Brewing Co. Building plans which include a beer garden, tap room, and ten barrel brewhouse are in final stages. The brewery plans to leverage as many local ingredients including not only hops but fresh fruit and honey not only for the beer recipes but to include a small selection of rotating seasonal food and drink pairings. Live music and outdoor festivals are to be featured regularly.

Final stages of securing a location are in progress. Once secured, Dutch Girl Brewery plans to bring on board a professional brewmaster to help develop key recipes. The tap room is expected to start with 8-16 taps with emphasis on developing  several mainstays complimented with a handful of seasonal and specialty releases including barrel aged beers. Styles planned include a “Dutch Girl Kolsch,” pale ales, sour beers, and also likely a milk stout. The brewery would also like to feature it’s own hard ciders with potential future plans to also include mead and distilling as well. Licensing is already in progress, and the brewery is ready to hit the ground running (including a mug club announcement) once all the final pieces are put into place!
