How to Make Meatloaf with North Peak's Dubious Black Chocolate Stout

Finished Meatloaf Made With Dubious Black Chocolate Stout by North Peak Brewing Company

In the quest to combine beer with all the suits and trappings of my life I thought, why not meatloaf? Meat, beer, bread, cheese. I can only think of a few other things a man needs in life....well, there are some other things but for now let's just stick to those four. You can find a vast number of meat loaf recipes on the world wide websiphere (and probably a few in your Aunt Geraldine's cookbook), but I would wager that not a great many of them include beer. I found a recipe I could work with and make a few changes to and set to work...
Mixing Meatloaf Ingredients TogetherThis recipe takes awhile so it is a great day off of work or Saturday afternoon affair--feel free to add to the ingredient list a six pack of something tasty for the process. Here's what you'll need.
  • 2 tablespoons olive oil
  • 1/2 cup shallots, chopped
  • 5 cloves garlic, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup carrots, finely chopped
  • 3/4 cup baby bella mushrooms, chopped
  • 2 1/2 cups cube-chopped white or french bread (I used the wonderful "French Peasant Bread" from the good folks at Breadsmith)
  • 1 cup whole milk
  • 1 1/3 cup Dubious Black Chocolate Stout by North Peak Brewery
  • 1 Pound (93/7) ground turkey
  • 1 Pound of Dr. Beef's bacon sage sausage from Goodrich's Shopright in East Lansing
  • 1 tablespoon Worcestershire sauce
  • 2 large eggs, lightly beaten
  • 3/4 cup grated sharp cheddar cheese
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons kosher salt
  • 1 package thin sliced bacon

 

Mixing In Dubious Black Chocolate Stout By North Peak Brewing CompanyHeat the oil in a 12 inch skillet pan over medium-high heat. Cook the shallots, garlic, carrots, celery, and mushrooms until softened and just beginning to brown, about 7 minutes. Add the chocolate stout and simmer until most all the liquid is cooked off, about 5 minutes. Transfer to a bowl and let cool.

In a shallow dish soak the bread and milk until soggy, about 6 minutes. Squeeze the milk from the bread with your hands. The bread should be moist. Chop and add to the bowl of cooked vegetables & beer.

Preheat oven to 375°F. Add the remaining ingredients to the bowl of vegetables and bread. Add the ground turkey and sausage , eggs, salt, pepper, Worcestershire sauce, parsley, and cheddar cheese. Mix all of the ingredients until combined.

Line the bottom of a rimmed baking sheet with wax or parchment paper. Put the meatloaf on the pan and form a rectangular block. Wrap the meatloaf with the bacon in a diagonal pattern. Leave a 1/2- inch over hang around the edges and tuck under the meatloaf.

Finished & Cut Meatloaf | Ready To EatBake about 60 minutes or until the temperature at the center of loaf is about 180 degrees. Let rest 10 to 20 minutes to cool, slice and eat!

We were super happy with how this turned out. It was fun and easy to make, and you could taste the beer flavor in the vegetables. The shredded cheese was a nice touch also. Try it out and enjoy!
